Sage, Purple (Perennial)
Salvia officinalis 'Purpurascens'

ZONE 5-11, HT 24", SUN     
Purple spike flowers and oval, slightly furry, purplish leaves. A pretty ornamental that can be used in the kitchen as well. This is the preferred variety for medicinal use. Marginally hardy in the Champlain Valley.


Sage, Tricolor (Perennial)       
Salvia officinalis 'Tricolor'

ZONE 5-11, HT 24", SUN     
Tri-colored foliage of green, cream, and rose covers this aromatic and ornamental herb. Can be used in place of regular sage in all recipes. Plant in well-drained soil. Marginally hardy in the Champlain Valley.

Long lasting flowers in shades of blue and purple begin in early summer. Fragrant foliage.  Prefers moist but well drained soils. 


Savory, Winter (Perennial)
Satureja montana
ZONES 5-8, HT 12", SUN
Not to be confused with 'summer savory', which is a vigorous, flavorless annual. Winter Savory is a tiny, woody, shrub that grows best in poor, dry, well-drained soil. Prune all summer long and enjoy the flavorful leaves fresh or dried with chicken, rice, potatoes, and in salad dressings.

 
Stevia
Stevia

A cousin to lantana, with leaves that are sweeter than sugar. Grows fast in hot weather. Small white flowers in tight clusters.


 
Thyme, Silver Edged (Perennial)
Thymus argenteus
ZONE 5-9, HT 6-12", SUN        
A favorite ornamental herb for hedges, edging, and knot gardens. Dark green leaves have pale cream edges. Can be used in cooking. Plant in dry soil.
