Sage, Common (Perennial)      
Salvia officinalis

A staple in any herb garden, common sage has oval, thick, slightly wooly leaves that can be used fresh or dried in meat, egg and vegetable dishes. Attractive ornamentally, it has purple-blue flower spikes. Useful as an insect repellent. Marginally hardy in the Champlain Valley.

Thus named for the cream variegation on its green-gray leaves. Also attractive in the garden due to its blue flower spikes.


Sage, Purple (Perennial)

ZONE 5-11, HT 24", SUN     
Purple spike flowers and oval, slightly furry, purplish leaves. A pretty ornamental that can be used in the kitchen as well. This is the preferred variety for medicinal use. Marginally hardy in the Champlain Valley.


Sage, Tricolor (Perennial)

Tri-colored foliage of green, cream, and rose covers this aromatic and ornamental herb. Can be used in place of regular sage in all recipes. Plant in well-drained soil. Marginally hardy in the Champlain Valley.

Leaves are edible, with a cucumber flavor. Greenish flowers in early summer are followed by attractive seed heads.


Savory, Winter (Perennial)

Not to be confused with 'summer savory', which is a vigorous, flavorless annual. Winter Savory is a tiny, woody, shrub that grows best in poor, dry, well-drained soil. Prune all summer long and enjoy the flavorful leaves fresh or dried with chicken, rice, potatoes, and in salad dressings.

Perennial, aromatic, ornamental, culinary herb. Lavender flowers.

 
Thyme, Lemon (Perennial)

This evergreen variety of culinary thyme is perfect for the garden or containers.  Foliage smells and tastes just like lemons and can be used in any recipe that calls for lemon juice or lemon zest.  It is particularly great with chicken and fish.

Summer Thyme (Perennial Herb)         

ZONE 5-9, HT 6-12”, SUN   
Plant in poor, well-drained, dry soil in a very sunny spot for best results. Leaves are highly aromatic and flavorful, and are widely used in French, Greek, and Spanish cuisine. Harvest leaves from late spring to early August, do not allow to flower.


 
Valerian officinalis (Perennial)
Garden Heliotrope
ZONE 3-9, HT 4-5', SUN/PART SUN         
Beautiful white flowers have a strong vanilla fragrance. Perfect for an evening or moon garden. If you deadhead before it sets seed, it will be very well-behaved.
